But I bet after a while, the effort would make your head hurt. If you read a whole book that way, for example.

I've seen this before. I wrote an entire 2-page letter to a friend of mine in this style and she understood every word even though it was all gibberish!
It really makes you wonder...

This is the third forum I've seen this on in the past week.

I think it's true that we read whole words rather than individual letters. But more than that, I think as we read we use contextual clues to prejudge what words we are about to encounter. So then we need only a cursory glance to affirm our suspicions. We tend to learn and use language in terms of phrases, rather than individual words. So we probably read that way too.
